Sophie's Haven 17,464 Posted July 8, 2014 Report Share Posted July 8, 2014 Crust: 4 cups of flour 1/2 teaspoon salt 2 cups sugar 3 sticks of margarine Combine dry ingredients; cut in margarine until crumbly. Take out 1/2 cup of mixture; set aside. Pat 1/2 of mixture (about 4 cups) in large ungreased texas sheet cake pan. Bake for 10 min. at 375. Add 1 heaping teaspoon of cinnamon to rest of mixture. Filling: 6-8 cups zucchinni peeled, seeded, and sliced as for a apple pie 2/3 cup or a little less of bottled lemon juice 1 cup of sugar 1/2 teaspoon of nutmeg heaping 1/2 teaspoon of cinnamon Cook zucchinni in lemon juice till tender (about 1/2 hour) stir constantly. Add sugar and seasonings. Add to this 1/2 cup of the reserved crust mixture, cook until thicken. Allow to cool. Pour over bottom cust and sprinkle on remaining mixture. Bake 30 min. at 375. Serve with your choice of whip cream. ****Great way to use all the overflowing zucchini that is now growing like crazy in our gardens. In place of nutmeg and cinnamon in the filling you can use 1 heaping Tablespoon of Apple Pie Spice. Which is what I prefer. 1 Quote Link to post Share on other sites
