mrsgrooge 0 Posted April 26, 2006 Report Share Posted April 26, 2006 Working Moms' Mandarin Orange Cake . . . aka the MOC (originally from Martha (trvlgal) on the Working Moms'board) -------------------------------------------------------------------------------- INGREDIANTS ~ CAKE: 1 box of butter cake mix 1 11 oz. can mandarin oranges (undrained) 4 eggs 1/2 cup oil FROSTING: 1 9oz carton of Cool Whip 1 box instant vanilla pudding mix 1 20 oz. can crushed pineapple (undrained) PROCEDURE: Mix one box of Duncan Hines butter cake mix (sometimes I use the orange cake mix, which is also good) with one 11 oz. can mandarin oranges (undrained), 4 eggs, and 1/2 cup oil with a mixer at medium speed for 3-4 minutes. Pour into a greased 9 X 13 pan and bake at 350 degrees according to package directions for the cake mix for a cake that size (approx. 35 minutes) or until cake is done and a tester comes out clean. For the icing, mix 1 9oz carton of Cool Whip, one box instant vanilla pudding mix and one 20 oz. can crushed pineapple (undrained) with a spoon until well blended.
