Luna 8,676 Posted October 21, 2008 Report Share Posted October 21, 2008 (edited) Serves 8 Preheat oven to 350 degrees For crust: 1 1/4 C graham cracker crumbs (from nine 2 1/4 x 4 3/4 crackers) 2 T sugar 5 T unsalted butter, melted. Stir ingredients together in a bowl until well combined, then press mixture evenly onto bottom and up side of a 9-inch glass pie plate. Bake crust in middle of oven for 10 minutes and cool in pie plate on a rack. Leave oven on. For filling: 1 (14 oz) can sweetened condensed milk 4 large egg yolks 1/2 C plus 2 T fresh or bottled Key lime juice Whisk together condensed milk and yolks until combined will. Add juice and whisk until combined (mixture will thicken slightly). Pour filling into crust and bake in middle of oven 15 minutes. Cool pie completely on rack (filling will set as it cools), then chill, covered, at least 8 hours. Top each slice with a dollop of whipped cream to serve.
